My mom packed my sisters and me ham-and-cheese croissant sandwiches almost everyday in elementary school. The croissants were purchased in bulk from Costco. I don’t eat as many croissants these days, but I love discovering little country bakeries around Vermont that have flaky, buttery croissants – what pastry aficionados would call “real” croissants.
Looking back, I was definitely spoiled by being able to have such fancy lunches everyday. My mom always made enough so that there was also an extra sandwich to share with a friend.
